#7 is Arielle Skye and Chris Moss, the duo behind the game-changing Courage Bagels. My first ever bite of a Courage bagel was a revelatory experience. I was born and raised on New York bagels, yet somehow, this was the bagel I’d been waiting for—light and airy, with a shatteringly crisp exterior and a crumb that’s just short of gooey. The top-notch toppings and open-faced presentation only added to the appeal. I got to know Arielle and Chris while reporting this story for Eater last summer, and learned that, unsurprisingly, the Courage bagel didn’t come out of thin air, but from years of dedication to their craft. Arielle and Chris are intentional, thoughtful, and kind people who care about greatness, which is a quality I greatly admire.
